Dedicated NAS, older Linux desktop or Gaming PC

I've used a QNAP NAS for my server for years, most content is 720p with some 1080p and a handful of 4k files. Typically would not have more than two people streaming at the same time - mostly just for me.

I'm getting a new PC this week and swapping my current Win10 PC to Linux. Wondering where best to have my Plex server.

Current Plex server is on QNAP TS451+ Celeron J1900 2GB of RAM - used only for Plex

Linux Desktop to be HP Compaq 8100 Elite, Intel Core i5, 12GB RAM, Radeon HD 4600 - would not be used for much else

Windows 11 Desktop will be AM5 Ryzen 7 7700X, AMD Radeon RX 7800 XT 16GB, 32GB Ram, 1TB SSD - Would be used for gaming and processing data

------

Easiest thing would be to keep my plex server on the NAS. I will need to keep most of the media on the NAS as the new desktop will only have 33TB installed.

Would there be any value in using the old desktop with Linux for Plex or should I move it to the new gaming PC?
