Kingdom Hearts 3, Gummy ships

How does upgrading gummy ships work? do you get blueprints for new ones, and just select the new ship? or do you gotta manually build each new ship?

Also, when i'm traveling with gummy ship, the camera seems to keep going upwards so i fly higher rather than flying straight, is this intended? ty guys!!
