Help me build some classic European legends

I'm trying to build some classic European legends for a campaign I'm building so I'm making Robinhood, sigurd, Cú Chulainn, and any others that I can come up with. These are all going to be NPC's that the players run into at one time or another and hopefully fight along side of. So what are your favorite legends and how would you build them?
